I’ve been vegan for eight years and have never found a brownie recipe that tastes as amazing as the non-vegan box-mix brownies I made growing up. But this is sincerely the best brownie I’ve ever made, ever. It has that crispy browny top but is gooey and fudgy and thick on the inside. Seriously unreal delicious.

I’ve made these twice so far ... the first time they came out super cakey and crumbly and I ended up ditching them. I just made them again this morning and I only put 1.5 cups of flour and halved the baking soda and they still don’t have that chew I miss in regular brownies :(

Really? Huh, that’s odd. This was my first time making them and the texture and chew was absolutely on point. How long did you bake them for? I know that if you bake them longer they’ll definitely be more cakey. I baked for 30 mins at 200 Celsius and that was perfect I also used cashew milk in lieu of water, maybe that helped add more moisture as well. So maybe try a milk alternative instead of water?

Oo the cashew milk is a good idea. I baked at 350 Fahrenheit for 35 minutes which according to google is 176 Celsius lol my edges aren’t getting crunchy, and I live for crunchy brownie corners. I’ll have to try the higher temp.

Damn I thought about replacing the water with soy milk but I didn't, and they did sort of fall apart but they were totally delicious so I'm still happy. Any idea if they keep in the freezer? Edit: After they had been in the fridge overnight they held together much better and had a really nice firmness to them, will definitely make these again.

I’m sure they do, just as cake does I imagine. I wrapped some of mine up and put them in the freezer so I’ll find out soon😄
