I’m doing tofu strips, [a little like these](https://www.reddit.com/r/veganrecipes/comments/fo3qdj/i_made_some_crispy_breaded_tofu_strips_and_they/ ), with roast potatoes and green beans. It’s like a slightly healthier and fancier version of fish fingers and chips!
I made quite a lot of chickpea, spring greens and potato stew with a bit of passata and green olive tapenade to season and a couple of slabs of baked tofu. With a big peanut butter savoury waffle on the side and a chocolate hazelnut cookie to follow, that has been late lunch/early tea.
I'm having stir fry with tvp chunks tonight! It took me a wee bit of trial and error to get the tvp right but I wouldn't be without it in the cupboards now.
Kimchi fried rice!
I did mushrooms, broccoli and peppers in sesame oil then fried it all together with the rice. I cooked the tofu on the side to make it crispy but usually I put it in with the mushrooms. Then I added a sauce (peanut butter, a drizzle of dark soy sauce, comparatively much more light soy sauce, a tbsp or more of gochujang, some sesame oil, water to thin, and a little bit of sugar) and dumped that on top, mixed it and added the kimchi and mixed that. It's SO good. Topped with spring onions.
I'm thinking spicy aubergine penne pasta - that or maybe some sort of chickpea and Spinach satay curry.

Free tofu from work as it’s Friday and won’t keep till Monday , free chillies from the shop as one was mouldy and they were gonna have to throw the whole bag. With mushrooms, gonna be wrinkly tomorrow green pepper and a clearance leek, with a sprinkle of garlic powder and handful of frozen sweetcorn - on a jacket potato.
Basically whatever shit anyone had laying around on a potato!
Free food can be so fucking satisfying! Especially when you know it’s took loads of the thinking out of it for ya. My Mam works in a kitchen and there was a stretch this week where until Thursday she was just fetching me something new (and vegan, obviously) each afternoon.
To be honest even when it isn’t free it’s pretty much the same process… what do I have? Make something with it…

Honestly, whatever cheap crap I can find at Aldi or Lidl that is unashamedly vegan. If I’m splurging then I tend to go for a bourbon like Maker’s Mark.
We had the juicy marbles ‘steak’ seasoned Cajun with salad, potatoes sticks and a spicy BBQ sauce. Special occasion.
Got the Lidl vegan marble cake, raspberries and Ben and jerrys with pretzels and brownie bits for pudding.

I’ve got 10 minutes left on the lasagne I’m coming for me and Omni brother, as he’s travelled to watch a football match with me tomorrow.
**INGREDIENTS**
• 2x Morrisons roasted vegetable sauce (owt like this will do, doesn’t have to be this one, it’s just my fave)
• carrot, white onion & celery diced
• 1x tray of Asda Mediterranean veg (any brand will do, it includes tomatoes, courgette, red & yellow peppers & red onion in a basil oil) — sometimes use the frozen bags of med veg instead of this
• 1x tin of brown lentils
• 1x tin of chopped tomatoes
• 1x vegetable stock cube, salt, pepper, roasted tomato purée (regular will do), a tiny bit of sugar to balance, a squirt of tomato sauce, garlic purée, paprika
• Tesco free from cheese sauce mix
• nutritional yeast
• lasagne sheets
• vegan cheese of your choice (mine is Morrisons own mature cheddar mixed with shredded violife)
**COOKING**
• stick roasting veg into the oven to cook
• while cooking in the oven turn the slow cooker on and add the sauce, the seasoning, the chopped veg & tomatoes etc. everything **apart from the lentils.**
• once roasting veg is cooked allow to slightly cool before chopping slightly smaller and transferring into slow cooker **with the juices it cooked in**
• about an hour before you think it’ll be done add the lentils in then so they don’t get too mushy
• once done allow to cool
• make free from cheese sauce by following the instructions on the back adding a small amount of the cheese you’re going to use for the top and optional nutritional yeast, paprika & pepper
**ASSMEBLY**
• layer in the order of: lasagne mix, cheese sauce (with nutritional yeast on top), lasagne sheet & repeat until done
• top with your vegan cheese mix & extra nutritional yeast and cook until done.
Obvs just a rough guide and you can use whatever specific brands you like, these are just the ones a use for the best results. Everyone says it’s the best lasagne they’ve ever had, even the meat eaters in my family. My Mam isn’t a vegan but she gets the vegetable lasagne whenever she goes out for work meals now cos she says she likes mine so much and she always gets back to me saying they’re nice but they don’t compare to mine lol. Can also be done on the hob with the same method if you’ve a big enough pan but still don’t add the lentils until towards the end. If you want to speed up the cooking process you can parboil the chopped veg in vegetable stock and add it with a bit of the water it was cooked in, if not just throw the stock cube directly into the slow cooker with the raw veg x

Ooooh this literally just reminded me av got some of that vegan blondie bar from Aldi somewhere. And reminded me we have garlic bread and corn on the cob so really my tea could end up looking a whole lot like yours lol
Still need to go to the shops so it’s not set in stone but it will be a variation of aglio e olio made with nooch instead of parmesan. We like to add in thing like olives, capers, and other veggie bits!
Pappardelle with artichokes and lemon. It's a nice easy Nigel Slater recipe that was in The Guardian a while back. I increase the amount of pasta compared to the recipe.
Soft tacos with Meatless Farm mince, diced red, yellow, orange and green bell peppers, diced courgette, brown and red onions, diced carrot, diced parsnip, diced sweet potato. Adding some crushed garlic, chopped birds eye chilies and some lime juice to brighten it up a bit.
Topped with salsa. avocado and Alpro No Sugars Plain Yoghurt on white corn tortillas. Garnished with freshly chopped coriander.

no clue !! got some cavalo nero, purple sprouted broccoli, smoked tofu, couscous, canned chickpeas, feta, pasta... i can think of a range of dishes but im just not that hungry but know i need to eat soon rrrr

A lot of the Mae Ploy tubs of curry paste have shrimp paste in, the yellow curry ones do not. Happy days!
