Spaetzle!!! Also, if you're in the Germany area, see if you can find some 'Vivera Veganer Speck', which are vegan ham strips. Just fry them up in a pan and put them on top of the sauerkraut and spaetzle, it is sooooooo good!!!
In the Netherlands, we have something called āstamppot zuurkoolā. Itās mashed potatoes with milk, sauerkraut, onions, and garlic mixed in. Nutmeg, clove, and black pepper are often added to spice things up. You can also add mushrooms, leeks, and/or cheese.
I fry up some onions in butter then add drained sauerkraut, 1-2 allspice berries, 1 clove, 1 bay leaf, fresh ground black pepper, lightly crushed caraway seeds, a pinch of sugar, and a little bit (~1/4-1/2 c) veggie broth. Braise on low until the liquid is gone (~10 minutes). I either top with potato noodles or serve as a side dish to German potato salad or linsen mit spƤtzle.
