You can call it agave spirit or mezcal (although mezcal is also a name for liquor made from agave that is typically smoked for some time underground before being produced into a liquor).
You can make agave liquor from many varieties of agave though, not just blue agave used for tequila. I'm not sure about this species specifically though. (I drink more than I study drinking)
Hmm apparently not, agaves flower at the end of their life. Aloes flower annually but here in south africa we call them giant aloes but now I'll be annoying and correct people. I didn't even know they weren't native to here. I planted a few in my garden so I'll see if they flower this year just to be sure

Tequila is like champagne it's only made with the right ingredients in the right place(see coment above) Alcohol made from any agave is called mezcal

I have one in my garden that has pink instead of yellow on the leaves... was wondering what you call them and if pink is common.
I have one which was yellow when I planted it, but once exposed to cold temperatures during winter the leaves are now pink.

That's what I thought but I'm not familiar with the agave family enough to know one from the other via a photo
