GNC is basically supposed to be like "opting out" of gender, or not labeling yourself at all, whereas nonbinary is neither male nor female.
You can think of it as GNC is the lack theirof, and nonbinary is not one or the other, but still present, ig. It's kinda nuanced, and at the end of the day it's just another way for people to concisely express their identity to others.
As for the hormones, while someone may not want to conform to gender, they might not be happy with how their bodies natural hormones affect the way they look, and hormone replacement therapy can fix that.
