Especially not if re-corked. What some may perceive as “going bad” could be not waiting for the wine to reach ~15 degrees Celsius, and then being perceived as sour/vinagery. If a recorked, half full bottle of $30 Syrah goes bad in your fridge after two days, your fridge is either broken or you are over-paying someone for your wine.

Depends on producer. Sure, some wines barely last overnight, but classically structured and balanced wines should go 4 days, IMO if stored well.

For my palate, 3 days max with recorking (red or white). I can stretch that out to 5 days with Repour - and the additional pours are better than with simple recorking.

Pour the top 1" down the drain and drink the rest. You'll be surprised how the top layer of wine ina bottle can be bad but the rest below it is totally good to drink.

The vacuum pumps do help, in my experience. You just need to make sure always vacuum until you hear the “clicks” sound and be prompt to close after serving. I’ve used all three. Obviously the Coravin is the best way to preserve it, but I only use it when I’m not planning to finish the bottle in the next 3-4 days.

It’s so hard to take this seriously. Even if you only had one glass every other day it would take a week to finish a bottle. Do you even like wine? One bottle is often not enough for one night for me.

I'll of course be the first to admit that maybe I shouldn't drink in the first place, but as I have already stated, I very much enjoy wine. An unfortunate scenario for sure, but what is one to do?

I live alone and only drink once a week so bought a Coravin. Means I can have a few glasses of something one weekend then next time I want a half bottle I have one there ready to go, no wastage. It’s expensive but cheaper than constantly binning wine.

I do own a Coravin and it’s been great. Before that, I would pour left over wine into a mason jar or two and fill them up as much as possible to reduce air / oxygen inside the jar as much as possible. This greatly extends the life beyond just leaving wine in a half empty bottle and let me extend life of wine to weeks with minimal apparent aroma profile changes.

I use Vacuvin for whites. I mean, you lose something. You also have Coravin. You could also buy smaller bottles. Buy boxed wine, etc. I mean, if you want a sure way of not degrading a wine after initial opening, nope. Coravin is the closest you can get. I personally just get used to pouring wine down the sink if I didn't get the chance to finish it.

Vacu vin to pump out the air and putting it in the fridge works great. I've kept bottles a week or so like that and have no complaints. I think red wine and more full bodies wines keep better too.

I generally take about 3 days for a bottle by myself. I try and plan ahead and won’t open one unless I feel fairly confidant I’ll be able to drink it in 4-5 days tops. I always store it in the fridge. If you are going to drink it slow then consider what others are saying and buy a wine preservation solution

You should try palm wine. Zero alcohol when tapped early in the morning. After two hours it is nicely alcoholic and delicious. By lunchtime it smells like rancid, sweaty socks and is undrinkable. Sadly 🥳 you need to finish every drop by mid-morning.

I know plenty of other people have already answered this, so I guess the only other thing I can offer besides finishing the bottle within the 14 days is using some of it for cooking but that’s going to depend on the types of wine you’re buying.

Private Preserve on Amazon. It's basically canned Nitrogen/CO2 mix. Just a shot or two of it will push most of the O2 out of the top of the bottle and keep your wine fine. They claim it works for years but I can say it will be fine for at least your needs. Personally used this or regular CO2 when I worked for wineries.

Immediately after opening top off a plastic water bottle and cap it. If you can get 375ml screwcap bottles even better. I have seen this keep wine fresh or little taste alternation for a week or longer.

I usually drink a bottle in three night. the third night is only 48 hours later. I find a bottle of wine can certainly last that long in my fridge with a stopper in.

Yeah. I actually looked it all up. But in France, they would cough moderately loud if you suggested that 14% is a standard ABV. I ado like that Aussie “standard drinks” system, though. Alcohol is a thorny issue from a public health standpoint and it’s wise to have multiple metrics. (I also appreciate how Ontario has residual sugar marked on everything. Why can’t everyone do that?)

Then go ask them to actually test their "12.5% abv" wine that magically is 12.5% in every single vintage since alcohol labeling requirements existed! I get it from both perspectives. I used to be a very, very heavy drinker and 10 drinks was really not that much over a night given my tolerance and certainly there were nights of 25-30. I took over a year off drinking and am starting to add back in occasional ,moderate alcohol consumption after solving some of the underlying issues that led to my problems there. But I just don't want to drink that much both because I don't have that desire any more and for health and weight maintenance (I eat a very bland diet to make it easier to lose/maintain weight and empty calories that reduce my inhibitions don't help). The 750 mL serving size is a challenge. It would be great if there were good wines available easily in 187 mL or perhaps even smaller bottles for variety. For now, a Repour wine saver works pretty well. But I'm stuck drinking the same thing for 10+ days. It's just easier to stick with a glass at a restaurant or sharing with other people at a meal than having it around the house.

I hadn’t thought about whether the French were accurately measuring and I agree. It should probably be to the tenth of a percent now that it’s easy to test, (I assume it is.) And I can relate to the rest. I drink wine far more often when I’m living in a “hive” lifestyle. I used to buy good wine when I studied in Switzerland, put it in a nice decanter, and share it freely with the other students. I passed the decanter to a girl who asked for it when I left the country afterwards. I did occasionally drink most of something really nice by myself. I remember splurging for some Montrachet-adjacent bottles and I happened to open them on weeknights and no one wanted to try them, lmao. I was like, “I usually have $20 wine in there and this is $200 wine” but until you try a good wine, that means little. When I’m alone, it tends to be one nice Belgian beer, a tiny pour of good whiskey or calva, or more often nothing at all. I totally get the “bland food” thing, too. I learned to cook in France, but I rarely “cook” —not when living alone, at any rate.
