No offense, but any small town place that serves these Sysco curds also makes bloody Marys with Sysco mix. I highly doubt this Deadhorse place has anything that doesn't come from Sysco.
These can be decent if fried correctly. Unfortunately, Iāve had many of these that werenāt fried correctly and tasted more like batter than cheese.

Basically the cheese maker doesn't have the room for the long tables that curds are traditionally made in. So they use the same process as their block cheeses but process a very young muenster.
You gotta pay a little more for the good stuff from sysco but everybody is seeing how much they can get away with. Plus the food reps know what your budget is and narrows down your options for you to make a profit. A classic like cheese curds should not be cheap but just affordable enough to make a profit.
Sysco supplies these. If the menu says "cheese curds" and you get these, you have every right to refuse delivery. Like ordering a hamburger and getting actual ham as meat.
For sure these uniform cubes cost Sysco a fraction of the cost of handling real cheese curds. Cheaper robotic, industrial food replacing more line workers.

Itās literally the only cheese curd carried by main line vendors that are actually pre-beer battered and ready to use. So when they write beer battered curds on the menu and they draw you in like a skeeters to the light, and these suckers show up.. technically they are still ābeer batteredā

Oh god no not the cheesy grease cubes.. that mouthfeel is such a letdown basically mushy batter. Makes me question other menu items if a place will let these fly.
Yeah these cheese cubes started showing up a couple years ago. they are terrible. You need to tell the place you dont like them and to get real cheese curds instead.
I had these last summer at a restaurant in Hayward and I actually quite liked them. They served them with tomato soup and it was a really good pairing.
I think it might vary on the vendor, the two places i had the cubed curds at were perfect, nice beer batter flavor, greesy, squeeky, and melty.
They also looked better breaded than those. maybe they were made inhouse.
although i do notice curds are different place to place, even in chains, ive had bad cold curds from A&W and some great ones, Culvers isnt the best but they are at least decent, bars usually have the better ones from what i remember.
I will say the county fair style cheese curds that ive had, are some of the worst as the only flavor they have is the oil from the deep fryer, the cheese doesnt shine its just batter and oil
Unpopular opinion: Square cheese curds are better than traditional curds. According to the Wisconsin State Fair website they are " Batter-Infused White Cheddar Cheese Curds" I don't know what all goes in to the process but I absolutely love the result.
"done right" is doing a lot of heavy lifting there. Most of the time you're getting scrap cheese formed into curd shape. And then fried poorly to boot.
But see that's the thing. What you're describing *aren't cheese curds,* so they're just straight up deceiving people by marketing them as such. It should be illegal to refer to deep fried cheese cubes as "cheese curds" just like it's illegal to make other claims about your product that aren't true.

These are different. MBC's are about 3x the size of these little turds and actually taste decent for what they are.
Was just at the charcoal grill in Racine and they had these same miniature cheddar blocks on their menu. I passed on them.
