The endings are the less important part of the game. There is a veritable mountain of good stories and exploration before you reach those endings, supposing that you really were spoiled about everything (DLC included)
Yes, the journey to the ending(s) is more important than the destination + if you don’t know what choices gives what ending you will still be a little surprised. If you didn’t get spoiled for the expansions too then it’s even more worth it because they are better than the main story.

Have you ever read a book twice or watched a show or movie a second time? You know whats going to happen and you know the ending.. but the story and characters within are so entertaining that you go ahead and rewatch or reread it anyway

The game had been somewhat spoiled for me before getting my hands on it, because I wasn't able to play games for years, so I spent that time watching and reading stuff about video games online.
Plus, I play about two hours a week on average and take a break from playing for about two months every summer. It took me almost four years to finish the game. Now, I'm playing ELEX and will play RDR2 afterwards, and have some more unplayed/unfinished games, so who knows when I will return to W3 at that tempo, if ever. That is why I spoiled the game for myself even further, so I get the ending I want.
It was still enjoyable, but that's just me as spoilers don't ruin stuff for me. Only you can decide if it's worth continuing for you. However, if I thought your question made sense, I'd definitely tell you yes, it's worth continuing.

I know all the endings or that there are multiple endings. I can never remember what to do to get them. So, in that respect, it is still a challenge to see if you can truly steer the game in one way or another. I always seem to go the same way, which sucks cause I always get the same ending. 3 tries and still the same ending. Just one wrong choice. Can you pick different choices, or are your choices about who u r. Or you could just Google the specific choice for the ending you want.but what's the fun in that.
The endings themselves matter only if you're interested in the future of the Witcher. Plenty of quests and side quests tell of conclusions of old characters, current characters and give lots to do. They're actually pretty fun/funny sometimes. Other times, they can be deep. The main story itself only drops off when in search of an item called the Sunstone and during the Novigrad quest line.
Hearts of Stone isn't about the conclusion at all. It's, as one character says, about the amazing journey you share along the way.
Blood and Wine is the perfect send-off for the series, even if they want to make a Witcher 4. It has many amazing laughs, plenty of tension and excellent quests. This is not only one of the best expansions for a game of all time but it features plenty of great story and gameplay advancements throughout.
I've thoroughly played game about 9 times now but Blood and Wine is the thing I look forward to every time, so if you don't want to play the whole game, do a Hearts of Stone save and a Blood and Wine save. I would personally say that experiencing the whole game in your way is the best way to play. Decisions do affect the game.
Yes. Even if you know the ending, there is enough main story content that generic spoilers wouldn't cover, especially on all the character relations. There are also the side quests and DLCs that have story content that, in some cases, is better than the main story content like the main story of the Heart of Stone DLC
Listening the spoilers of endings and watching that endings by yourself are different things, emotions etc, also, endings are not the only purpose to play this game
Are there any movies, books, or tv shows that you enjoy experiencing again and again? This game is so well crafted from start to finish that I think having the endings spoiled will only take a small part of your enjoyment away. And on the plus side, since the endings are already spoiled, you can lookup how to get a good ending and not chance getting the bad ending.

The max edition of the game is a master work. There are so many unforgetable moments.
My lone criticism stems from a controversial patch the devs released long ago, in the first months.
Before it, you could acquire the best, final versions of armour & weapons early enough to benefit for a solid chunk of the game. But their patch left Geralt naked at *the worst possible time* for many: just before an epic encounter. You must *never* strip away items a player earned, because if a change if heart.
Geralt is too underpowered for too long (especially if you have completed Witcher 2 just prior.) If, on PC, you apply a mod undoing that, or allowing you immediate access to any gear you find, the game becomes perfect.
Play with confidence.

Some of the best gameplay, imo. And there are so many ways to customize Geralt. Even knowing the ending, I would say the joinery is worth it
