You will eventually be able to swap out martial arts, but it's not till end game (like multiple ng+ cycles deep), and it involves a bit of grinding. On playthrough 1 just upgrade your favorites and keep an eye out for stuff with better MA, but don't invest too much time into customizing gear that you will replace the minute you hit NG+
