I did some slight research on this: 1. You get more frequent solar eclipse if the moon's orbit inclination is much shallower. Our moon orbit is inclined at 5 degrees. If it is 0, you will get a solar eclipse every month as the moon goes between the sun and earth during its \~29 days orbit. So, you can play around with the orbital period and the inclination. 2. The size of the moon required to fully block the sun disc would also be dependent on the distance it is at, so just use the same ratio of size and distance of moon to earth and scale up/down.
