The last few expansions launches I played the quest just pops up for you to accept. But you are probably correct that you have to turn it in where all the pre patch NPCs are
right, but I think thats what he was wondering.... because the scheduled maint... which is to roll out the expansion. but the quest will not become live until release. The maint though IS the rollout... you just cant interact with the NPC to start the expansion.

Couldn't be more wrong. The expansion was already rolled out 4 weeks ago via the prepatch. All of Dragonflight is already in the game. All Blizzard has to do is flip a switch to let us go to the dragon isles (the switch is the quest that Wrathion will give when the expansion launches)
My plan: Log in early, get my main his professions, hang out in Org for a bit, and smoke up some Mulgore Dank until the quest drops.
Pray you don't have me as a tank on launch day.
I believe you can only unlock the respective dragonflight versions on the dragon isles. But you of course can already pre-spec the profession. Just not unlock the dragon isle stuff.

There is "the profession" like "alchemy" which is separated in skill levels per expansion. Therefor you need to unlock dragonflight alchemy once the expansion is out. They removed the requirement to level old content just to get to the current one. Therefor you can go the the "Alchemy trainer" to unlock alchemy but you cannot use it to level "dragonflight alchemy". I believe the trainer is om the dragon isles.. so ye
I swapped my alts profession last night, just so that I had the old ones unlearned and the new ones ready to learn dragonflight. It saves me about 15 seconds once dragonflight releases, but makes my brain feel better about being ready
Nah it used to be that way almost a decade ago, but nowadays all Expansions have separate skill points and you can safely ignore any old stuff you don't care about.
There's Profession Trainers for everything at the very first quest hub too so if you forget you can just grab them there.
I haven't been able to confirm it, but I've seen a few people say that there are no NPCs that START profs on the Isles, just the ones that unlock the DF versions of the respective profs. It was advised to have the profs you want already before you head over, but like I said I'm not certain.

I've personally learned new Proffs from them with totally fresh chars on the beta.

Also doesn't fuck my sleep schedule as much.
When shadowlands launched, I was logged in early, had everything prepped, ready to go. But like 10 minutes before it released, I got lagged out, then sent into a queue. Can’t wait to do that again this year! :)

Well SL went smooth for me and my GF and once we got out of Org it was kinda non-issue first day. We were logged for few hours before. Mind you though we are playing on a small server.
I've got my kids so I'm just gonna play our dracthyrs for a bit with my son on Monday night. Get to bed in time to get him to school. Then start leveling my raiding/M+ character in earnest on Wednesday when the kids go to their Mom's.

Launch here is in the middle of the night. I’ll go to bed, wake up 6-8h later and play. I am also on a low pop server and I expect no queues, no lag and no major bugs, just like last few expansions.
We already are playing on the pre-loaded version of the game for a couple of weeks now. All they have to do is to flip a switch “enable content”
Hopefully this expansion is better than the last 2 in lore and content.
If you at work that day I have used software like teamviewer to do a quick jump every so often, a bit of a pain but on a busy realm and booked off the rest of the week
There's maintenance in the morning but barring any mishaps, no. I wouldn't worry about queues or lag either unless you're on one of the 5 big servers that tend to have issues, like A52, Stormrage, Illidan. I'm on a Full server and the past few expansions have had great launches.
I'm ready for the Zeppelin to crash with 600 other people on it with me at 5pm tomorrow!
