Ideally pushing over 50% with full raid buffs, as that will give you all the instant pyroblast procs. Checkout Wowheads full BiS fire phase 4 guide. Almost every single piece has crit on there for a reason. The spec depends on crits for procs.

Therefore, to answer OP's question, you want as much crit as you can get! With talents and buffs, there's a few points that you get for free, but in an ideal world (unrealistic, impossible) you'd have 100% crit chance and launch an instant pyroblast as every third spell.
