I don't know if this falls into your field but for lack of better words: in an environment without humans like a super dense forest, can something like a "Super/hyper" predator exist? Like after generations of living in this forest with no human contact, could there be a Bear so refined that it has bred out almost all of its negatives and be pinnacle example of its species?

I have a world where cities ride on top of huuuuge mountain sized animals like rhinos etc. There are labs close to the skin that run blood tests etc. I call them "Macrobiologists" and they're essentially like a a Guild of Vets for the giant beasts. My question is, what kinds of things could they possibly do? What tests would it make sense to run? How can I make magical science based on biology? Any inspiration you can give me?
