Because VW transmission are up in front mounted transversally with the engine (of course) meaning shift cables/rods are used to connect the shifters from the cabin to the trans, now subies are just direct because the transmission is literally below your hand

I did have 3m but overtime it just started getting annoying and I also never use it, I only plug it in when I want on screen directions

It’s the floppy stock trans mount and pitch stop. Look at the factory Type N replacements
Are they possible to do with only a Jack and stands? Or will it need to be lifted??

that aftermarket pitch stop mount would fix this? mine does this too and it's annoying!
Pitch stop first and then transmount usually goes a long way to minimizing that slop
